  • So far I’m surviving…

    In an amazing show of iron will, I’m actually surviving the inlaws! I raided the freezer and started thawing out all of my meats for meals over the next few days. At least that way I can quickly choose anything I’m in the mood for while the rest of the family teases me with all of their evil side dishes!

  • Not so discouraged…

    It now appears that I’ve overcome the little plateau that I hit when I cheated at Margaritas last Friday. Although I’ve been in ketosis all week I really hadn’t lost all that much weight. As of this morning my trend line shows a drastic drop! Maybe I can finally get back on track…I’m finally back under my projected weight loss schedule for the first time since the 15th.

    On the other hand, Kelly’s parents will be visiting and there are plans to make halushki. If there was ever a dish that would send Dr. Atkins running in fear, this would be it. Not only is it extremely high in fat with bacon, butter and cheeses but it’s also a high carbohydrate dish due to its processed potato base. On top of that, the house has been stocked with plenty of caramels and candy bars to appease the inlaws.

    Either way, I have a feeling that I’ll be devouring a lot of barbecued meats and cheeses this weekend as the wife and the rest of the family prepares their heart attack surprise!

  • New Apple G5 specifications “accidentally” leaked.

    The specifications for the new G5 were “accidentally” leaked this morning on the front page of Apple.com. Screenscrapes are available of the full Web page as well as a closeup of the specs, an introducing teaser and a two page spread of the G5 with Cinema Display.

    Plenty of news sources have officially picked up the story. Hrm…now my brand spanking new Dual 1.42GHz PowerPC G4 doesn’t seem so hot.

  • Sleep or caffeine?

    I have no idea what has changed lately but I’ve been practically falling asleep at work for the past few days. My sleeping habits and schedule are the same and I’ve been falling asleep quite easily. But, for whatever odd reason, I’m completely exhausted all day at work to the point where I actually cracked open a caffeinated Diet Coke this afternoon to try to wake up. After six months with virtually no caffeine intake, I’m now completely wired.

  • And a Diet Coke float for dessert…

    Pour your favorite diet cola into a glass and add a dash of heavy cream…you have an instant float without the ice cream! Or, if you’d like to be naughty, KETO Foods and Atkins now carry low carb ice cream!

  • Low carb bread…

    Lorraine, the owner of the cafeteria at work, found out that I was on Atkins and baked up a batch of low carb bread for me to get my sandwiches made on. Although it’s quite rich and meaty in texture, it makes a great treat! She passed on the recipe and mentioned that the most inexpensive place to pick up the flour soy flour and whey protein is Trader Joe’s.

    • 2 cup shredded cheddar
    • 8 eggs
    • 1 1/3 cups soy flour
    • 1 1/3 cups whey protein
    • 2 tsp baking powder
    • 8 Tbsp sour cream or mayonnaise
    • 8 Tbsp olive oil
    • Diced bacon, chives or jalape�os to flavor

    Mix contents in a medium bowl and spread evenly over a cookie sheet. Preheat oven to 350° and bake for 10 to 12 minutes. Each slice is approximately 2 carbs!

  • The candy drawer is calling me…

    There is a candy drawer in the break room at work that is always freshly stocked with the latest junk food offerings to keep the troops happy. Luckily I have been successfully avoiding the drawer…even though it is inches from the water cooler.
